Pancake & Pikelet Mix – Phoenix Gluten Free


Pikelet and Pancakes to serve warm and yummy, keep them dairy free with rice milk or add jam and cream for an indulgence.

Take 250gm of mix and add one egg and 250mls of rice milk or milk and 5 mls of vanilla, let stand for 10 mins before cooking.  Spoon into hot greased pan, flip, serve, top and enjoy


Add more liquid until a thinner consistency, cover bottom of hot greased pan thinly for a crepe or thicker for a hotcake, turn and serve.  You can add blueberries before cooking and top with bacon, or squeeze lemon juice and sugar, anything that takes your fancy!
